Sweet Potato Crisps

Ingredients

1 large sweet potato  
1 large egg white (lightly whipped with a wire whisk)  
½ tsp vanilla extract  
¼ tsp low-calorie sweetener  
¼ tsp cinnamon  
   
Prep Time: 5 to 7 min. Cooking Time: 30 to 35 min. Servings: 2

Directions

  1. Preheat oven to 425°F.
  2. Slice the sweet potato on a mandolin to ensure thin, even slices.
  3. Place slices into a resealable bag or plastic container with a lid, making sure there's a little room. Add remaining ingredients and shake up to coat well.
  4. Spread coated slices over lightly greased cooking sheet.
  5. Sprinkle additional sweetener and cinnamon to ensure a tasty, colorful coating.
  6. Bake at 425°F for approximately 25 minutes until browned.
